I'm having the same issue, have to uninstall and reinstall every day. It only started happening last week:
Reading the dump file I'm seeing these errors:
ERROR_CODE: (NTSTATUS) 0x80000003 - {EXCEPTION} Breakpoint A breakpoint has been reached.
FAILURE_BUCKET_ID: BREAKPOINT_80000003_SoapUI-5.7.0.exe!Unknown

Update: The issue may be related to updates / virus protection software. My issue resolved itself for a week after routine updates were installed by my organization, but is back now. I found this solution posted by another user - having my IT team look into it for me as well.

I am having the same issue. It suddenly stopped working this morning .
Opens the splash screen and then it stays there forever.
Any luck resolving the issue? Is it antivirus software/ updates that is causing the issue?
Kindly share any further details you may have.

I am still having the same issue here where SoapUI opens the splash screen and it stays like that. I have to uninstall/reinstall then restart computer and only then will it work. I have seen the comment on another thread where security permission where change however I am not permitted to do that in my organisation. Is there a feasible fix for this issue?
