It seem like there is no UI option to turn off automatic updates in Chrome browser ?

Champion Level 3Correct. Chrome isn't very friendly that way, but if you do a search for "turn off auto update chrome", you'll find some answers.

It's been a while but I believe what we did was the third option and renamed the folder.

Third option (Remove or rename the <Program Files>\Google\Update folder.).
In addition, I also used to disable all Google Update Service(s) found in the Services control panel.
