Is it possible to record server stats for a time after the completion of a test?

An example use case would be the following:

A continuous load test is run for a period of 30 minutes. During the test I see the memory usage increase from 65 to 75 percent and CPU usage hovers at around 70 percent. After the 30 minutes is up and load is not longer being applied to the server I would like to continue seeing recordings of the server stats for a time in order to verify for example that the memory and CPU usages drop back down to their normal levels.
