Disclaimer: My answer is based on Jira Cloud and Zephyr version 1.3, which I would assume Smartbear now calls the legacy experience. If you are using the new experience (2.0), it might work differently.
After uninstalling Zephyr Squad Cloud v1, the "Test" issue type is still visible to me as a regular Jira issue and has the familiar Zephyr logo. But all test steps and executions are removed. You should export your data before cancelling the license or uninstalling the app.
