I had same issue on OEL 7.2.
There was an invisible form blocking the main window.
I started typing on the keyboard and that revealed a text field.
Then I tabbed and got to next field, then again to reveal a button.
After I hit enter when I had the "skip" (or similar name) button selected the form closed and the main GUI became responsive.
Next time I started SoapUI I didn't have this problem, it seems to be a one-time form that pops up (invisible) on first startup.
Same problem, gengdhal's solution worked perfectly for me too.
