The XPATH used in SOAP UI is standard XPATH. So learning the basics for e.g. from W3Schools http://www.w3schools.com/xpath/default.asp should suffice for starters.
I'm not sure if its only me, but i'm not fully able to understand the issue. Could you please provide the complete XML document you are trying to traverse or provide some screen shots if possible of what you say is the discripency. That should help better understand the problem
