Stress Testing = 100% CPU

I'm running a thread stress test from 250 to 2500 virtual users on an AWS m1-xlarge instance (15gb ram, 4 CPU's, 64bit) and we have adjusted the working memory over 4GB for for SoapUI. We are not seeing any memory issues, but the application is hanging at over 90% CPU and higher. Is there any config change I can make to stop this? We have tried using LoadUI instead but for some reason the latest releases will not install on this machine, and 2.1.1 is only 32bit and when we receive multiple errors it has memory issues.
We have an urgent need to run a 3hr max 2500 user stress test but I can't seem to get either app to work with any level of confidence.
I have attached my most recent soapui-errors.log for reference.
