I copy the text from the header of the job and then paste it into the list of jobs screen
I just really need to know what I'd put in the set text field, so that it pastes the text I've copied, which can be different every time as every order has a unique number

Champion Level 3I can now see, that you are doing a Ctrl+C, to copy the selected text, followed by a Ctrl+V to paste the text. What is the SetText used for?
You need to mimic user behaviour i.e. highlight the text; press ctrl+c to copy the highlighted text; navigate to the desired text control and click it; then press ctrl+v to paste the text.
