How do I tell SoapUI where to store my project, etc files?

I need to store my project and related files in separate directories on my system, organized by client, etc. How do I tell SoapUI where to save my files for each project (i.e. not under the installdir).

    Ah, it's set during the "New Project ..." creation process in subsequent dialog windows.
