Thanks anyway for your help Rao. Looks like it's time to start saving up for a pro licence to get access to support. Shame they don't offer per incident pricing.

Hi Cube00,
I know that the issue you reported is quite old. But I also ran into same issue today where I wanted the BinarySecurityToken to be of Value type "http://docs.oasis-open.org/wss/2004/01/oasis-200401-wss-x509-token-profile-1.0#X509v3". However, SOAPUI was generating the Binary Security Token with type "http://docs.oasis-open.org/wss/2004/01/oasis-200401-wss-x509-token-profile-1.0#X509PKIPathv1".
I was able to get the v3 type by selecting the checkbox "Use Single Certificate for signing" on the Signature window. I think it should work for you as well. Give it a try.
Its sad that nobody from Smartbear responded to this issue.
