Update to my own post:
Just now I noticed that when I reopen the project, there is always a default "Request 1" request in the project. When I select the Request 1, and click "Add to test" in the menu bar, my old test suite (with test case, and test steps) magically appears.
This can't be designed behavior, right? I am running on a macbook pro with OS El Capitan, if that has any significance.

This frustrated me too until I realized that I just had to click on the SoapUI NG tab and your test suite will reappear every time.

Yes, that is ok. I can live with that (still seems a bit odd that it would show half the project —everything but the trst suite — until the Soap NG tab is selected).
