Do I have to have SOAP UI Pro to do data driven testing?

If I want to vary the contents of the xml tags in the requests I send to a service, do I have to buy SOAPUI Pro to use the data driven testing functionality, or can this be achieved with poor mans SOA...

Yes, that's correct. Without a lot of scripting you need soapUI Pro for this (soapUI Pro features DataSource TestSteps with XML support and DataSource Loops).
