I had the same issue. Go here - https://www.soapui.org/downloads/soapui/soapui-os-older-versions/#_ga=2.259719434.1029072957.1625854027-936478644.1625854027 and download the previous version (5.5.0). I was able to install it without an error. Hopefully there's a better fix soon.
