I figured out that the problem was happening as the property name was being forced to lower case letters, so the property was not found. I solved this by opening the same project in SoapUI 5.0.0 and inserting the property name there. v5.0.0 does not change the property name to lower case, I can now open the project back in 5.2.1, and the property name is ok here.
