Hi!
Try the following:
1) Import the WSDL for the service you want to monitor into a new soapUI Project
2) Start the SOAP Monitor (right-click the above created project and select "SOAP Monitor") in proxy mode
3) Configure your client to use the host/port you configured in (2) as HTTP Proxy
-> The client requests should go through the proxy in soapUI and show up in the soap-monitor log..
