I managed to get it working this way:

def request = testRunner.testCase.getTestStepByName("XML Store");
def prop = request.getProperty("property");

def rootNode = new groovy.util.XmlParser(false,false).parseText(prop.value);

rootNode.element[0].@id = "700"
