I don't believe there is any "official" or straight forward way of doing this in the free version. The Environment functionality is a "Pro" only feature. I'm sure you could do something with Groovy scripting, perhaps others might be able to suggest what they do it (I use the Environment functionality in Ready API).

As Radford said, there is no out-of-the-box environment functionality in SoapUI O/S. However, it can be easily approximated with the tools that are there. Have you seen:
