After running the installer, have you made any changes to the installation at all? This does not look like an error caused by the 'first run' of SoapUI. Looks like SoapUI was previously opened using a workspace that now does not exist.
If you look at this line of the log:
You'll see that SoapUI is trying to find the workspace, but cannot.
How did you install SoapUI? Did you copy the installation folder/zip from someone else's machine? IMO, I'd just re-install it, should only take a few minutes, then import whatever workspace/projects you need as necessary.
