Found a workaround by manually defining -Dsoapui.logroot=<path_to_logs_dir> in external Tomcat startup, found in https://community.smartbear.com/t5/SoapUI-Open-Source/Logs-not-printed-when-war-deployed-in-Tomcat/td-p/35260.
