We're sorry that you didn't find the demo useful, and that you are still confused about the user interface. Maybe you will understand more about it if you spend some time browsing the documentation on soapui.org. A general tip is to check out all the pages entitled Getting started (there's one for each section I think), such as this one:

What you usually do is to add assertions to each request - until then you don't really have proper functional tests.

There is a tabbed view, but unfortunately it is still a Pro feature. Many of us in the SoapUi team thinks we should make an effort to have such a view in the free version. but because this view is currently based on a closed-source library, there are licensing issues that prevent us from open sourcing it. In other words we would need to rewrite it to include it in the free version. The trick to use SoapUI open source efficiently is to avoid maximizing all the windows (or, technically, desktop panels).
