If you are looking to change an endpoint, you may want to check the built-in Environments functionality in SoapUI Pro:
http://www.soapui.org/Working-with-Projects/environment-handling-in-soapui.html
That will allow you to keep different endpoints and activate them as needed as you select a particular environment.
