In your REST Request Editor - http://www.soapui.org/REST-Testing/working-with-rest-requests.html#1-request-editor-views - where you provide the payload, you can make that JSON or any other format dynamic with SoapUI's property expansion (http://www.soapui.org/Scripting-Properties/property-expansion.html)
