Issue with input data

Hi All,
I am new to SoapUI. Sorry for basic question.
I am looking for document that help me to undeerstand about the input data to Soap UI.
For example :
<!--You have a CHOICE of the next 2 items at this level-->
Should I move second item if my choice is the first item and what is the format of datetime input.
Your help is greatly appreciated.
