As of now, it doesn't support dark theme, yes its good if it will have dark themes, it helps to read the things properly for those who has eye sight problems.
There is one feature request ticket already raised for this last year. I think development teams are working on this.

Don't know whether this is the answer you were looking for, but SOAPui 2.3.0 seems to introduce some dark themes. Only the script editor though, not the full UI.Improved script editor:
Now, you can easily change the font size in the script editor by rotating the mouse wheel while holding the CTRL key down.
If needed, you can easily enable the dark color scheme for script editors. To do this, right-click within the editor and select the desired color scheme from the Change Color Scheme menu

It is a start but looking for the entire platform to have that ability. Just strains my eyes after staring at it all day :) Thanks though!
