How do I log SoapUI responses?

I have a pretty simple SoapUI REST script that i'm trying to run at specific points throughout the day. I set up an interval scheduler to call the soapui runner and it seems to work fine. I'm interested to review the rest responses for every time the script ran but I don't see a way to set this up. The scripts are not necessarily failures so there are no failure logs to review. In soapui I would just manually run the script and look at the output so now I'm trying to automate this process. Any ideas how to accomplish this? Thanks
