Automatically save all projects on exit
Using SoapUI 3.5.1, can't seem to be able to get this option to work. Is that a known bug?

no.. strange.. do you have any errors in the soapui-errors.log file after exiting?

eviware.com- I do have one unexplained behaviour. Tried to ask about it here: viewtopic.php?f=13&t=5783&sid=93598609435ae7c783b664e2f7501dba#p18016
Could this be related to that? - I resolved the problem mentioned in the link above, which resolved this issue.
