Incoming POST test

I want to test an incoming POST with Soapui, but I am struggling finding a good way within Soapui to do this. I thought it would be easy to write a Groovy Test step which opens a new thread a spawn a web server which sits there and wait for the POST to come, but I can't find any example.
Anybody has any suggestion?
