Is it possible to configure the .dll that installs to c:\users\user\appdata folder to run from another path?
Whitelisting prevents user profile from being run and SOAPUI fails to open.

Don't think you can do such a thing.
But you may consider using the stand-alone version.
Can't find the 5.6 version but the precedent is available:
