Would like the ability to set a deadline for the entire review (mainly for author) and the ability to set a deadline on when the document has to be reviewed by the reviewers and observers. Would be pretty cool if the document could be locked for comments after the reviewer deadline has passed.

You're in luck, there is a deadline feature (link to documentation is below) however it doesn't lock the record after the deadline has passed.

That looks to be the deadline for the entire review...unless i'm not seeing something. I would like to see a deadline for the review AND for anybody commenting. A deadline for comments to be in.
